A broad category of non-still wines whose common ancestor is the bubbly wine of France’s Champagne region. These are produced in many styles from a range of varietals around the world.
Food Pairings
Brut
Mild cheeses, chicken liver pâté, mini-quiches, oysters, sushi, and shrimp.
Extra Dry, Asti Spumante, and Moscato d’Asti
Fruit salad especially strawberries, apple/pear tarts, lemon meringue, cream pies, and yellow cakes.
Buying, Storing, & Serving
Sparkling wine should be served chilled. Take care when removing the cork as the pressure can force the cork to shoot out unexpectedly.
Almost all sparkling wine is ready to drink when released and in most cases should be consumed within two years of release.
Older sparkling wine typically has less sparkle, a softer texture, and muted flavors.
Store bottles in a cool dark place on their sides in order to keep the cork moist.
