Blueberry Breakfast Crumble
Cut into bars for breakfast on busy mornings.
Ingredients
- Crust2 cups oats
- 1/2 cup brown sugar
- 1/4 cup sliced almonds (optional)
- 1/4 cup flour
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 cup butter (or margarine), melted
- Filling2 cups blueberries, fresh or frozen
- 1/2 cup sugar
- 1/4 cup flour
- 1 tsp almond extract (or vanilla extract)
- Topping1 cup flour
- 1/2 cup brown sugar
- 1/2 tsp cinnamon
- 1/4 cup butter (or margarine), cut into small pieces
Directions
- CrustIn a large mixing bowl, combine oats, brown sugar, sliced almonds, flour, baking soda, and cinnamon.
- Pour in melted butter or margarine and stir to combine.
- Press into two greased cake pans (or one 13 x 9 casserole dish).
- FillingIn the same bowl, toss blueberries with sugar, flour, and almond or vanilla extract.
- Spread onto pressed crust.
- ToppingWipe out bowl and combine flour, brown sugar, and cinnamon.
- Cut in butter or margarine until crumbly. Sprinkle over the blueberries.
- Bake at 375°F for 25 to 35 minutes until set and golden brown on top.
