Chicken Caesar Salad
Egg-free dressing! And still, empirically delicious!
Ingredients
- 2 boneless, skinless chicken breasts, cut into bite-size pieces
- 1 pinch kosher salt
- 1 pinch pepper
- 1 head romaine lettuce, washed and chopped
- 1 clove garlic, grated
- 1 tsp anchovy paste
- 1 lemon, juiced
- 1 tsp Worcestershire sauce
- 1/4 cup reduced-fat mayonnaise made with olive oil
- 1/4 cup olive oil
- 4 strips bacon, cooked until crispy and crumbled
- 1/3 cup grated Parmesan
- 2 cups cherry tomatoes (optional)
Directions
- Preheat skillet over medium-high heat. Salt and pepper chicken breasts. Add a drizzle of olive oil. Brown chicken in skillet.
- Add lettuce to a bowl. For dressing combine garlic, anchovy paste, lemon juice, Worcestershire sauce, and mayonnaise in a medium bowl. Whisk to combine.
- Drizzle in the olive oil while continually whisking. Add bacon, Parmesan, and chicken to the lettuce. Toss with dressing.
- Top with cherry tomatoes if desired.
