Eggplant Pizzas
Layer your favorite toppings onto slices of roasted eggplant—the possibilities are endless!
Ingredients
- 1 large eggplant
- 1 Tbs olive oil
- Salt to taste
- Pepper to taste
- 1 6 oz can tomato paste
- 1 14 oz can fire-roasted tomatoes
- 1 Tbs minced garlic
- 1 tsp Italian seasoning
- 1 1/2 cups shredded mozzarella cheese (or cheese of your choice)
Directions
- Slice eggplant into discs.
- Rub with olive oil and sprinkle with salt and pepper.
- Bake for 20 minutes at 400°F.
- Flip eggplant.
- Spread eggplant slices with tomato paste and pile on fire-roasted tomatoes (drain if runny).
- Top with garlic, Italian seasoning, and cheese.
- Bake 10 minutes more.
