Fiesta Salad
Summer's bounty in a bowl—beans, tomatoes, and corn all mingle with a simple vinaigrette.
Ingredients
- 1 1.25 oz package taco seasoning mix
- 1/4 cup water
- 2 Tbs canola or olive oil
- 1/4 cup vinegar
- 1 15 to 16 oz can pinto beans, drained and rinsed
- 1 14 to 16 oz can whole-kernel corn, drained
- 2 tomatoes, peeled and diced
- 1/4 cup red, yellow, or green pepper, diced
- 4 green onions, cleaned and finely chopped
Directions
- Mix taco seasoning, water, oil, and vinegar together in a bowl.
- Add vegetables and stir.
- Cover and chill several hours or overnight.
