Fresh Fig Salsa
Spicy and sweet—make this salsa mild by leaving out the jalapeño pepper.
Ingredients
- 2 1/2 cups diced fresh California figs
- 1/2 small red onion, finely diced
- 1 firm and ripe tomato, diced
- Salt and freshly ground pepper, to taste
- 1 jalapeño pepper, ribs and seeds removed, diced
- 2 Tbs chopped fresh cilantro
- 2 Tbs olive oil
Directions
- Combine figs, onion, and tomato in a bowl. Season with salt and pepper.
- Add lime juice, jalapeño, cilantro, and olive oil.
- Mix together and let stand for at least 1 hour to meld flavors.
