Herbed Green Salad with Ham
Heady and herbaceous, a welcome addition to any brunch spread.
Ingredients
- 1 head lettuce
- Ground black pepper, to taste
- 1 Tbs vegetable oil for cooking
- 2 cups bacon, cut into 1/2-inch pieces
- 3 Tbs white wine vinegar
- 1/2 cup prosciutto, cut into thin strips
- 1 Tbs minced chives
- 1 Tbs minced tarragon
- 1 Tbs minced chervil
- 1 Tbs minced parsley
- 1 garlic clove, peeled and crushed
Directions
- Wash greens and drain well. Cut or tear into bite-sized pieces and add to large salad bowl.
- Sprinkle greens with pepper.
- Pour vegetable oil into skillet over medium heat; once warm, add bacon cubes and cook until crisp.
- Pour bacon and drippings over greens.
- Add vinegar to skillet, heat for a few seconds, and pour over greens.
- Add prosciutto, herbs, and garlic to salad and mix well.
- Serve immediately.
