Lamb Steak Calypso
Ginger, lime, and rum harmonize a calypso-flavored melody in this Afro-Caribbean dish.
Ingredients
- 1 1/2 lbs lamb leg steaks
- 1 cup fat-free chicken broth
- 1/2 cup brown sugar, packed
- 2 Tbs lime juice
- 2 Tbs rum, optional
- 1 tsp ginger root, grated
- 1 clove garlic, finely chopped
- 1/2 tsp cloves, ground
Directions
- In a large, glass, baking dish, combine: chicken broth, brown sugar, lime juice, rum if desired, ginger, garlic, and cloves.
- Add lamb steaks, turning to coat. Cover, refrigerate, and marinate for 2 to 24 hours.
- Remove from marinade and discard marinade.
- Grill four inches from medium-hot coals, for 5 to 7 minutes per side, or until desired degree of doneness.
