Marinated Tomato, Fresh Fig, and Feta Cheese Pizza
The only Mediterranean-inspired pizza you'll ever want to make—fresh basil and tender figs all covered in melted feta cheese.
Ingredients
- 3 cups seeded and cubed, vine-ripe tomatoes
- 1 Tbs chopped garlic
- 1/4 cup shredded fresh basil
- 1/4 cup chopped green or black olives
- 1/4 cup olive oil
- 1 lb fresh California figs, sliced
- 12 oz Feta cheese
- 3 8 oz balls of pizza dough
- Salt and olive oil, as needed
Directions
- Combine tomatoes, garlic, basil, olives ,and oil in large bowl; let stand at least 30 minutes.
- Preheat oven to 500°F.
- Roll out pizza dough balls to about 1/2 inch thick and 10 inches in diameter.
- Spread with marinated tomatoes; top with sliced figs and sprinkle with cheese.
- Bake at 500°F until cheese is melted and crust is browned, about 8 to 10 minutes. Cut in wedges and serve hot.
