Mashed Potatoes with Sour Cream and Chives
So perfect on their own, they don’t even need gravy!
Ingredients
- 5 Yukon Gold potatoes
- 1 pinch kosher salt, or to taste
- 1 cup sour cream
- 1/2 cup whole milk (more if needed)
- 1 large bunch chives, chopped
- 1 pinch pepper, or to taste
Directions
- Wash potatoes. Peel if desired.
- Cut into quarters and add to a saucepan.
- Cover potatoes with water, add salt, and bring to a boil.
- Boil over medium heat until potatoes are very tender.
- Drain potatoes and add back to the saucepan. Add sour cream and milk.
- Mash potatoes with a potato masher. Add more milk until you get the desired consistency.
- Add chives and adjust salt and pepper to taste.
