Mexican Wedding Cakes
Made all over the world, this cookie proves that a cookie by any other name tastes just as sweet.
Ingredients
- 2 cups sifted flour
- 1/4 cup sugar
- 1/2 tsp salt
- 1/2 lb butter
- 2 tsp vanilla extract
- 2 cups finely chopped nuts, preferably pecans
- Confectioner's sugar for coating
Directions
- Preheat oven to 325°F.
- In bowl, sift together flour, sugar, and salt.
- In another bowl, mix together butter and dry ingredients; add vanilla and nuts and combine.
- Lightly grease a baking sheet.
- Create ½-inch balls with dough and place 1 inch apart on baking sheet.
- Bake for 20 minutes until lightly browned; roll in confectioner's sugar while still warm.
