Pecan Pie Bars
The epitome of Southern comfort food.
Ingredients
- 1 1/2 cups chopped pecans
- 1 lb brown sugar
- 2 sticks butter
- 1/2 tsp kosher salt
- 4 eggs
- 1 1/2 cups flour
- 1 tsp vanilla extract
- Pecan halves for garnish
Directions
- Preheat oven to 350°F. Take chopped pecans and pulse in food processor until they are very fine. Spread them out on a cookie sheet and roast for 8–10 minutes, just until they are fragrant.
- In a large mixing bowl, add sugar, butter, and salt. Whisk to combine. Whisk in eggs one at a time until incorporated. Add flour and whisk until just combined. Add vanilla and pecans and mix until incorporated.
- Place mixture in a greased 9 x 13-inch pan. Place pecan halves on top of each 2 x 2-inch square. Bake at 350°F until bars pass the toothpick test—around 30 minutes.
