Pomegranate-Honey Roasted Game Hens
A festive main course dish that is subtly sweet and laden with spices. Scalloped potatoes would be an ideal side dish.
Ingredients
- 1 cup pomegranate juice
- 1/2 cup honey (plus 3 Tbs)
- 1/2 tsp ground coriander
- 1/2 tsp cinnamon
- 1/2 tsp allspice
- 1/4 tsp cayenne pepper
- 6 cloves garlic, smashed
- 3 game hens, split in half
- Salt and pepper
- Pomegranate seeds (garnish)
- Roasted pistachios, chopped (garnish)
Directions
- Mix pomegranate juice, ½ cup honey, coriander, cinnamon, allspice, cayenne pepper, and garlic.
- Pour the mixture over the game hens. Cover and marinate overnight, or for at least 8 hours in the refrigerator, turning occasionally.
- Drain the game hens, reserving the marinade.
- Simmer the marinade, covered for 10 minutes; reserve.
- Season the game hens with salt and pepper.
- Bake at 450°F, basting frequently with the reserved marinade, until game hens are just firm to the touch (about 25 minutes).
- Remove from the oven and let rest covered with a tea towel for 5 minutes.
- Brush each half with 1/2 tablespoon of honey. Garnish with pomegranate seeds and chopped pistachios.
