Pumpkin Apple Pecan Muffins
The best fall flavors packed into one muffin!
Ingredients
- 1 cup canned pumpkin
- 1/3 cup vegetable oil
- 3 eggs
- 3/4 cup brown sugar
- 1/2 cup sugar
- 1/4 cup maple syrup
- 1 tsp vanilla
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/8 tsp allspice
- 1 apple, peeled and diced
- 1/2 cup chopped pecans
- 1 1/2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
Directions
- In a large bowl, combine pumpkin, oil, eggs, sugars, maple syrup, vanilla, cinnamon, nutmeg, and allspice until fully mixed. Stir in apples and pecans.
- Combine flour, baking powder, baking soda, and salt in a separate bowl. Fold into pumpkin mixture just until combined.
- Spray muffin tin with cooking spray. Fill muffin cups 3/4 full. Bake at 350°F for 15 to 20 minutes, until a toothpick inserted in the center comes out clean. Enjoy!
