Rice and Cabbage Soup
Have the sniffles? This warming soup is just what the doctor ordered.
Ingredients
- 1 cup uncooked rice
- 2 lbs cabbage, trimmed and quartered
- 2 onions, peeled and chopped
- 2 Tbs butter
- 1/2 quart hot chicken broth (or beef broth)
- Salt, to taste
- Ground black pepper, to taste
- 3 Tbs Swiss cheese, grated
Directions
- Place pot of salted water on stove.
- Cook rice and cabbage in pot for 1 hour. Drain well and discard water.
- In saucepan, warm the butter and sauté onions for 5 minutes.
- Add onions to pot with rice and cabbage.
- Add hot broth to pot and bring to a boil.
- Season with salt and pepper.
- Blend if desired.
- Sprinkle with grated cheese and serve.
