Roasted Asparagus with Red Onions and Feta
A festive vegetarian side dish.
Ingredients
- 1 lb asparagus, trimmed and cut into 1 1/2-inch pieces
- 1 red onion, diced
- 1/4 cup olive oil
- 1 Tbs freshly squeezed lemon juice
- 1 1/2 tsp salt
- 1 tsp black pepper
- 1/4 cup crumbled feta cheese, more if desired
Directions
- Toss asparagus and red onion with olive oil, lemon juice, salt, and pepper.
- Spread in a baking dish and cook at 450°F for about 15 minutes until tender. Stir halfway through cooking.
- Immediately transfer to a serving dish and stir in feta. Serve.
