Spicy Black-Eyed Peas
These spicy beans will make you a convert—you'll be making them every New Year's Day.
Ingredients
- 1 16 oz package black-eyed peas
- 1/2 lb smoked bacon, diced
- 2 stalks celery, diced
- 1 sweet onion, diced
- 2 cups picante sauce
- 3 cups water
Directions
- Soak the beans overnight in water.
- Cook bacon until crisp. Add bacon and the bacon drippings to the beans. Add celery, onion, and picante sauce.
- Add water to beans, bring to a boil, and reduce to a simmer. Cook beans until they are tender, 45 minutes to 1 hour.
