Spinach Tomato Soup
Stir things up—add whole leaf spinach to traditional tomato soup.
Ingredients
- 1 Tbs olive oil
- 2 cloves garlic, chopped finely
- 1 lb fresh spinach, chopped or whole
- 1 28 oz can tomato sauce
- 1 28 oz can chopped tomatoes
- 1 quart vegetable broth (or chicken stock)
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1/2 tsp dried marjoram
- 1/2 cup cream
Directions
- Preheat a large soup pot. Add olive oil and then add garlic. Sauté over medium-low heat, being careful not to burn, for 2–3 minutes.
- Add all ingredients to the pot. Bring to a boil and simmer for 20–30 minutes.
- Add cream and heat through, but don't boil again.
- Serve with grilled cheese or crackers.
