West African Ribs
Ingredients
- 2 slabs pork baby back ribs
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 Tbs vegetable oil
- 1 Tbs ground coriander
- 2 Tbs lemon juice
- 2 tsp red chile flakes
- 1/2 cup creamy peanut butter
- Salt and pepper to taste
Directions
- In blender container blend all ingredients except ribs until smooth. Spread paste evenly on ribs. Roast in shallow pan in 350 degree F. oven for 1-1/2 hours until ribs are tender.
