Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-size pieces
  • 1 pinch kosher salt
  • 1 pinch pepper
  • 1 head romaine lettuce, washed and chopped
  • 1 clove garlic, grated
  • 1 tsp anchovy paste
  • 1 lemon, juiced
  • 1 tsp Worcestershire sauce
  • 1/4 cup reduced-fat mayonnaise made with olive oil
  • 1/4 cup olive oil
  • 4 strips bacon, cooked until crispy and crumbled
  • 1/3 cup grated Parmesan
  • 2 cups cherry tomatoes (optional)

Directions

  • Preheat skillet over medium-high heat. Salt and pepper chicken breasts. Add a drizzle of olive oil. Brown chicken in skillet.
  • Add lettuce to a bowl. For dressing combine garlic, anchovy paste, lemon juice, Worcestershire sauce, and mayonnaise in a medium bowl. Whisk to combine.
  • Drizzle in the olive oil while continually whisking. Add bacon, Parmesan, and chicken to the lettuce. Toss with dressing.
  • Top with cherry tomatoes if desired.
