Ginger, lime, and rum harmonize a calypso-flavored melody in this Afro-Caribbean dish.

Ingredients

  • 1 1/2 lbs lamb leg steaks
  • 1 cup fat-free chicken broth
  • 1/2 cup brown sugar, packed
  • 2 Tbs lime juice
  • 2 Tbs rum, optional
  • 1 tsp ginger root, grated
  • 1 clove garlic, finely chopped
  • 1/2 tsp cloves, ground

Directions

  • In a large, glass, baking dish, combine: chicken broth, brown sugar, lime juice, rum if desired, ginger, garlic, and cloves.
  • Add lamb steaks, turning to coat. Cover, refrigerate, and marinate for 2 to 24 hours.
  • Remove from marinade and discard marinade.
  • Grill four inches from medium-hot coals, for 5 to 7 minutes per side, or until desired degree of doneness.
