Fruit and pork make a sweet and savory combination in this recipe that needs only three ingredients.

Ingredients

  • 2 lb boneless loin roast
  • 1/4 cup orange marmalade
  • 1 8 oz can mandarin oranges, drained

Directions

  • Place roast in shallow pan, coat with marmalade and place in preheated 350° F oven. Roast for about 40-45 minutes (20 minutes per pound) until internal temperature on a thermometer reads 150° F. Remove roast from oven; let rest until temperature reaches 160° F, about 10 minutes before slicing. Garnish servings with mandarin oranges.
