Ingredients

  • 1 1/2 Tbs canola oil
  • 2 cups diced yellow onion (1/4-inch)
  • 1 1/2 cups diced green bell peppers (1/2-inch)
  • 1 cup diced celery (1/4-inch)
  • 2 Tbs all purpose flour
  • 2 tsp minced garlic
  • 1 (14 1/2 ounce) can chopped tomatoes in juice
  • 1/2 cup low sodium chicken broth
  • 1 cup olives, whole, pitted
  • 3/4 tsp kosher salt
  • 1/2 tsp dried thyme
  • 1/4 tsp cayenne pepper
  • 1 lb large shrimp, peeled and deveined
  • 1/4 cup chopped green onion
  • 2 Tbs heavy cream

Directions

  • Heat canola oil in a large sauté pan over medium high heat. Add onions, peppers and celery and cook for 4-5 minutes. Stir in flour and garlic and cook for 2-3 minutes, stirring occasionally.
  • Pour in tomatoes, olives, chicken broth, salt, thyme and pepper. Stir and cook for 3-4 minutes until smooth and slightly thickened. Add shrimp, cover and cook for 3-4 minutes. Stir in green onions and heavy cream and cook until heated through. Serve immediately.
